Recipe - Taco Quiche

I make this quiche once every two weeks. Once it's baked and cooled, I cut into 8 portions, wrap each in plastic wrap and put in the freezer. The night before I expect to eat it, I take one out of the freezer and put in the fridge to thaw. Microwave for 30 seconds or so (I usually add some more cheese first).

Sometimes I add additional fiber by adding a smashed avocado on top, and round it all out with a dollop of sour cream. Yum!

Ingredients:
5 large eggs
1/2 pound ground beef, browned, drained
1/2 cup salsa
1 1/3 cup shredded cheddar cheese
onion and garlic powder, to taste
salt/pepper (optional)

Directions:
Brown ground beef and drain of extra fat. Place in bottom of pie tin and sprinkle with onion and garlic powder, and half of shredded cheese. Let cool for a few moments. Whisk eggs in a bowl, add salsa and thoroughly combine. Pour on top of meat mixture. Lightly stir with fork. Sprinkle rest of cheese on top. Bake in 350 degree oven for 20 minutes or until firm (no longer jiggly).

Serves 8 small portions.

Looks delicious! I'm going to attempt a vegetarian version, hopefully it will taste almost as nice :)
