Hmmmm... Eggplant.


Eggplant is a weird veggie, and one I don't really care for. But it's got some great vitamins and minerals, not a lot of calories or carbs, and can be really meaty and filling if you prepare it right.
Try some.

Hi, visiting your blog from the Hot 100. The only way I used to eat eggplant was in parmigiana (full of calories). Now I eat it in tempeh mix, just chopped up with some soy in a stir fry. Delicious!

Ish: Sounds good! I've been dehydrating our eggplants, crushing into powder, and adding a little bit at a time to things like spaghetti sauce. PLUS I pick them young and tender, before they get bitter.

I HATE eggplant. The first time that I fixed it, it was sour (much like spaghetti squash) and I never got over the taste.

I enjoy eggplant with squash (summer squash). I sauté it in a pan with Pam type spray and onion. Yummy.

I ate eggplant for the very first time over the weekend. It was an eggplant pasta primavera something...anywho, once i got past the look of it it was actually pretty tasty.
