I ignored the scale yesterday, and still took it easy from my accident the other day. Now, my headache is nearly gone, my gash is healing nicely, my cramping stopped, and I'm positive about lots of things.
First, a big change. I worked on our budget yesterday and boy howdy we're in a pickle! Money is very tight so Hubby will be living closer to his job during the week, coming home on weekends. He has a place to stay within 10 minutes of his workplace, a comfy bed, NO rent and a sweet motherly-type woman to take care of. Yes, Hubby will be staying with his mother. This will actually help with our finances, and help MIL not be so bored and alone, with only a dog to keep her company.
Second, because he won't be here during the week, I need to do a week's worth of cooking on weekends so he can take 5 breakfasts and 5 lunches with him. LOTS of cooking! And not just one dish because he doesn't like the same thing every day. So I'm cooking a pot roast in the crockpot that will be ready in the morning, just in time to put in containers. He'll get 2 days worth, with meat and veggies and potatoes, and I'll take 2 portions of just meat. I'm also planning on cooking him some wontons and a lasagna-muffin (I'll post pix when I finish each one. Probably some plain ole pasta with sauce too. Maybe some soup that I don't like to eat ... like winter squash with chicken and corn and broccoli. For breakfast I'll give him biscuits with sausages (already done) and some kind of muffins. Maybe some cereal bars.
This will be good for the menu-idea book I'm working on. Everything I prepare for Hubby will have to be transported first to his mom's house and put in her freezer, and then one breakfast and one lunch carried in his lunchbox.
Third, this low-carb thing is HARD! Of course, it IS only day 1, but I can do this! I realize I didn't get enough calories today, but trying to get the right amounts of fat, cholesterol, protein, sodium, carbs and protein is complicated! Anyway, spent about half of what I usually do at the grocery today even tho I got lots of meat and some veggies.
Hmmm... I'm getting hungry! And I just ate!!!
Fourth, I figure you all are probably tired of hearing the itty bitty details of my life so I'll change the way I post. I'll ramble on about something (maybe details of the recipes I'm working on for my menu-ideas book), give a quick breakdown of my food, then my numbers for the day. Ok?
Here are my plans for the weekend: fix 3 chicken coops, muck out the goat pen, make room for and receive hay in the barn, cook a week's worth of food, and get the potted tomatoes and peppers and eggplants ready to move into the house because it's getting cold! Oh, and eat healthy by entering every morsel into my spreadsheet!

I know this is a carb treat but I saw this yesterday on Dr.Oz with my daughter and we tried it out. It was yumm! Take graham cracker, break in half put a dollop of fat free cool whip and freeze. Oh my! The kids just gobbled them up!! I had one, promise and it was yummy.
We went out and picked squash tonight. We've got tons!! Lots of butternuts and spaghetti squash. Hoooray!

I know you are not find of your husband doing this type of schedule. (from way back when!) Hang in there Vee, I make my Dad meatloaf muffins to take to work he needs lunch & dinner and loves when I make a batch of them to share with my parents.
Meatloaf Muffins
Makes 12 muffins
1 package lean ground turkey (or beef)
1 box Stove Top stuffing mix
1 cup water
2 egg whites
1 medium onion, diced
1 medium green bell pepper, diced
1 cup grated zucchini
Mix together and divide into 12 muffin cups that have been sprayed with non-stick cooking spray. Bake at 350 degrees for 35-40 minutes.

This is another version (the one I make for myself w/o the stuffing mix)
1.25 pounds lean ground turkey
1 red bell pepper-diced
1 yellow onion-diced
handful of mushrooms-chopped up
1 egg white
1 cup shredded carrots
salt, pepper
shake or two of onion and garlic powder
a few splashes of worcestershire sauce
Mix throughly and make 12 meatballs. Add them to a cupcake pan and bake at 350 degrees for 40 minutes.
I couldn't do the low-carb thing. I tried a couple of times, but the grouchiness and hunger weren't worth it. :)
I'm doing some batch cooking this weekend, too, but it's just for me. I don't like cooking regularly, so it helps me to have my single servings in the freezer. :)
Your meal is great such that if we make our diet chart as you have made we can control our body fat.
