HOW TO DO CROCKPOT BACON

Thanks for asking about how I do my bacon in the crockpot. Basically, I do everything in the crockpot that I can, so was looking for a way to start bacon and have it ready in the morning.

I get Wal-Mart brand low-sodium bacon, 1 lb packages. The night before (usually just before I go to bed) I open a package, pop it into the crockpot just as is, put the top on and set it on low.

By morning, it's cooked enough. Nice and melt-in-your-mouth texture. When we want a bit of crispiness, I jack it up to high for an hour in the morning. The parts at the top get crispy and the other parts are melt-in-your-mouth.

I guess if I wasn't lazy, I could separate the pieces before putting in the crockpot. That might make them crispier and easier to separate to eat but I don't. When serving, I just use a big spoon (with holes in it) and kinda cut it in half.

Afterwards I move the bacon grease to a skillet to fry eggs (bless our little chickens who give us such wonderful ovals!) or into a jar that goes in the fridge.  SOMETIMES I leave some of the bacon grease, add 2 cups of water, 1 cup of lentils and a little onion powder, then keep it on low until dinner. Delish!

After my fried eggs yesterday, I took my migraine meds and tried to go to bed, but my kid wanted to invite a new friend over to "hang" (teens don't "play"). So I chilled, did some more reading on seizures and seizure alert/response dogs, then took the young man home just in time for us to get ready for bed.

So ... yep, I forgot to eat. Did drink some ice water with my evening pills. Wasn't hungry. Migraines make me nauseous too.

As for today, my migraine was mostly gone by the time I woke up this morning. Had 2 protein bars for breakfast then tended the livestock. I'm still hungry.  Think I'll drink some iced decaf coffee to fill me up, then do some work for an hour or two, then fry up another egg.

I'll figure out the rest later.

Probably won't blog or read other blogs during the weekend. I'll see if I can get away because honestly, I haven't told Hubby or the Kid that I'm working (again) to get healthy so I don't want them to see me blogging. Not yet. You know?

So ... our plan for this weekend:
-Sam's for veggies and fruits and ground beef
-cookout if it doesn't rain the whole time
-finish putting the fence around the garden
-once that's done, plant seeds for corn, winter squash, millet and sunflowers
-repot tomatoes, etc
-library

You know ... nothing too terribly exciting. Hey... I might even get a nap in! Plus we have a hen sitting on eggs that should hatch this weekend AND our goats might actually give birth this weekend. HOPE!
